Motivation
There are a lot of dependeny updates that need to be done. Therfore we do just one PR instead of multiple.
Modification
Update all dependencies, gradle, gitrhub actions & require java 21 (for now).
Result
All dependencies are up-to-date and java 21 is used to compile & is required.
