看起来很有道理。不过我想问下葱花是不是根本就不需要炒了。。。是否可以标注一下炒葱花应当需要几秒钟呢

葱花应该是不用炒的,原因如下:

  1. 葱花一般用来‘红肉’提升菜的嗅味(也就是菜闻起来的香味)和给菜润色作用(红黛绿)。
  2. 在一般料理中,上来用来炒的佐料,一般是用作这道料理基础味道,如辣椒,蒜末。葱很少见,一般会把葱炸成葱油来做,如葱油饼/面等
  3. 葱花本身茎很细,不耐炒和煮,也就很少见到需要炒的。
