CMS 5: griddle-react is wildly outdated

We currently use the griddle-react library for the grid view of assets-admin and for something in versioned-admin. This library is very outdated.
Not only are we using version 0.x when v1 has been released, but this library in general hasn't been touched since 2019. It's effectively abandoned and has been looking for maintainers since 2019. We should find a more up-to-date alternative.

Acceptance criteria

• A well-maintained library is used in place of griddle-react

Stretch goal

• The chosen replacement is similarly customisable as griddle-react is, and could potentially be used as a basis for a refactored gridfield

We don't have a great alternative for this library and switching would basically require us to redo the UI of the assets table view.

Can't really get this don in time for CMS5 launch but we can have a follow up look after that.
