It would be nice to be able to create multiple users in tipi and set permissions so they can install an app but not uninstall it for example...

Yes Multi Tenant support would be great, with multi domain support as well and seperate runtipi directories for that user example /runtipi/USERNAME/TIPI Dirs and files
