How to classify the count according to the classes you hold

Hi Everyone
I'm working in my tesis project related to object detection and tracking

So I used the google colab file of roboflow for traing my custom dataset related to Counting sweet peppers in green houses

The main objective of my tesis is first if identify the maturity of the sweet peppers and classify in four classes after when you finish this part the second objective is use a video created by me with a images of green houses and count how many peppers are in this video using ByteTrack & Supervision algorithm and after that when you establsihed the estimation of how many sweet peppers are in the video after try to say for example in this video are:

100 sweet peppers but 20 are inmature and 50 are mature and 10 are Early Mead (that's the only part I'm missing but I don't know in the code how to do that)

this is what I have so far but I would like to display the video counting and classifying the pepper count by class

The classes are:

• Inmature
• Early-Mid
• Mid-late
• Mature
