I have 5 x-systemd.device-timeout entries in /etc/fstab, each =200ms, so I'm not sure where the 5 seconds is coming from.

Can't reproduce, I will require more information.

Is there a debug mode for that kind of information?

You could try sudo journalctl -f and see if anything pops up there, or strace and smashing enter when it freezes.

You could also provide lsblk -o +fstype,label,uuid,model, /proc/mounts and /etc/fstab I suppose.

And the versions/kernel you're running.
