Our IdP allows requesting multiple username attributes using OIDC claims. We therefore need to manually map the username field in Moodle to use this attribute.
The SAML2 plugin allows updating this data mapping, but this option is missing in the OIDC module.
Is there a possibility of adding this functionality in this module?

We are currently working on #2157, which is funded by reporter of the issue. The change allows site admins to configure the binding username token claim. There are three types of options: (1) a list of common claims defined in OIDC standard, (2) the default/common claims in EntraID ID/access tokens, and (3) a text custom token name entered by the site admin.
It looks like your request will fall into option 3 below.
The reporter of the issue is currently testing the changes. It will be included in the next 1 or 2 releases, depending on the process of testing.
