New to Jekyll: bundle exec jekyll serve failures

This is my first time trying anything with Jekyll (or Ruby!) and I had a couple of issues after following these instructions.

I followed the instructions to the letter but I don't think the correct version of Ruby was installed. When I do ruby -v it says

ruby 2.6.8p205 (2021-07-07 revision 67951) [universal.arm64e-darwin21]
and when I do which ruby I still see
/usr/bin/ruby

which I gather is the MacOS version, not the one I installed with rbenv (using rbenv install 3.1.2 and then rbenv global 3.1.2

I got a error as well when I tried to run gem install bundler:

ERROR: While executing gem ... (Gem::FilePermissionError) You don't have write permissions for the /Library/Ruby/Gems/2.6.0 directory.

I assume that has something to do with me not working with the right version or Ruby.

Anyway, I'm not exactly off to the races here! Can anyone help me troubleshoot?
