Describe your use-case which is not covered by existing documentation.

All of the changes you describe in the brief documentation are not explained.
Where are the UI configuration options?
How do I change the colour/text/images?
If I have to bake changes into a new build of my Jenkins docker image, what files do I need to change and where?

Reference any relevant documentation, other materials or issues/pull requests that can be used for inspiration.

As the plugin has to do with the UI you find it's configuration under Manage Jenkins -> Appearance
Like all other plugins there is an xml file in JENKINS_HOME.
But the best is for docker based instances to use Configuration as Code. Just configure the plugin and then export the CasC configuration and you will see what you need to use.
