Uploading files with Email or folder scan allows to set meta data like tag, folder, language etc. Upload with the web interface seems to not offer that (or at least I could not find it). It would be useful to have this. In particular if you (initially ) fill the database with new documents, they need to either get the right metadata here or at least you should be able to somehow identify them later on in the search. (New document does not help if you do a lot in one day).
With some meta data here you could then filter them in the documents search and tag or move them properly.
Of course if you can set all meta data here one could immediately assign them right here. But this might be more complicated than some findable tag or so.

You can do this by creating a source and using this upload page to upload your documents. Here is a bit info: https://docspell.org/docs/webapp/uploading/#anonymous-upload

Maybe that is already enough for the initial upload.
