[Feature] Add version env variable to all docker images #56

Description
A version env variable helps us to know exactly what version we are running.

Detail
This can be useful in displaying on the frontend.

Acceptance Criteria

A NESIS_VERSION environment variable should be available to all containers.
A GIT_COMMIT_HASH environment variable should be available to know which commit each container was built from.
