Add GCP compatibility integration tests

When we rebase with upstream to keep our demo up to date, we should automatically test that the GCP-specific settings still work (and fix/triage any issues as part of the rebase process). This should test the helm chart (with gcp-config-values.yml) and the docker compose (make start) setups.
